Celebrating soccer wins with Mac & Cheese Chorizo Cornbread MuffinsFriday, June 13, 2014

Whether you call it soccer or futbol, the games are here and you've got to be prepared for some big game recipes for your family cookouts and gatherings! I've been trying to find some new quick and easy appetizers that my kids will love, besides our go-to guacamole and chips and I was inspired by this Macaroni Cornbread Muffin recipe. However, I wanted to add some more sabor and flavor to it, so I switched it up a bit, adding some spicier ingredients and making it a little easier to make.
Second I prepped the Cornbread Muffin Mix as directed, but only placed about 1/3 of the tin full, then baked. I cut the baking time on the muffin mix in half. It was a total of 20 minutes, so I baked just the muffins for 10 minutes.
Third, during the baking time, I made the Panko breadcrumb mix: 1/2 cup of Panko breadcrumbs, 1 tablespoon of melted butter, salt, pepper and chili powder to taste.
Fourth, after the baking was done, I added a scoop of the Macaroni, a scoop of the chorizo, a bit of pico de gallo (optional), then topped with the Panko breadcrumbs mix a jalapeño (totally optional) and put back in the oven for another 10 minutes (the second half of the baking time).
And then out the oven they came! #CollectiveBias made a huge #GolazoKraft with these bites!
It is the pareja perfecta for me!
