I learned a bit about Soybean Oil, and how it is commonly labeled as VEGETABLE oil! So just check your label, and just like that, the vegetable oil that I have hesitated to cook with was Soybean Oil all along! Through Soy Connection, I learned of the benefits, such as 0 trans fat, it's a source of Omega-3s and Vitamin E (something that I look for when buying multivitamins)!
So let me share this recipe with you. I adapted to include some cooked chicken, rather than tofu, but the rest is all the same! And my favorite feature of the site is that I can recalculate the ingredients per how many servings I want to cook!
